Subject: Raspberry Delight

DH requested a SF dessert for tonight & I came up with this concoction. It is in the fridge chilling now.

Raspberry Delight

Crush 1 pkg. chocolate graham crackers.
Melt 1/4 c. marg.
Mix marg & crackers in a pie plate. Press firmly to form crust.

Filling:

1 sm. SF Raspberry jello
1 sm. SF cream cheese pudding
1 fat free cream cheese, room temp
1/4 c. Splenda
1 SF Cool Whip

Fix jello & pudding according to pkg. directions.
Whip cream cheese & Splenda.
When jello is just starting to set add to cream cheese mixture.
Stir in pudding. Fold in Cool Whip.
Chill just till it starts to firm up
Spoon into pie crust & chill 3 hrs. Top with additional Cool Whip if desired.

I "HAD" to have a taste of the filling & it is "OH SO YUMMY"!!! My cousin stopped by & she liked it too. Matter of fact she had a small bowl of the filling while we chatted. I sent the recipe home with her too.

You can mix & match the pudding & jello to your liking. Regular graham crackers can be used as well as vanilla wafers. You don't really need a crust. Put it in parfait glass & garnish with raspberries or drizzle on a tiny bit of chocolate syrup.

Need to make a correction to this recipe. When making the jello use 1 c. boiling water & 1/2 c. cold water. The pkg. says 1 c. of each. The one I made today didn't set up quite firm enough to slice. Sure looked pretty tho. We just used a spoon to serve it.
