Subject: Baked Stuffed Peppers

I combined 3 different recipes to make these for lunch today. YUM!! YUM!!

I used an elongated sweet pepper my BIL gave me. Dunno what type, looked kinda like a Poblano.....no heat. Cut in half (lenghtwise) & de-seed & remove that whitish membrane. Mix 8oz fat free cream cheese (room temp) with 1 cup of shredded pepper jack cheese. Wasn't creamy enough for me so I added a big heaping TBS of fat free sour cream. Stuff both sides of the pepper, put back together, wrap with a slice of bacon, secure with toothpicks. Lay on a foil lined cookie sheet & bake @ 375 about 20 minutes or until bacon is crispy. They were DELISH & DH even liked them. I sure need to remember to take a pic now & then so you can see the results. Maybe I need to move my camera into the kitchen?!

that sounds so yummy! Once I get back on two feet I am gonna have to go shopping and try some recipes!

ooooooooooooh If you got those little tiny peppers (not hot) and used them stuffed with the bacon wrap, they'd make yummy appetizers
