Subject: Mexacali Chicken

Finally found the recipe. The amounts are a guideline. If you like more onions, peppers ect... by all means add more. I have made this adding about 1/2 tsp. cumin to the chili seasoning for a lil extra flavor.

MEXACALI CHICKEN

4 BREAST HALVES, BONELESS & SKINLESS
1 TBSP. CHILI SEASONING
PAM BUTTER FLAVOR SPRAY
1 SMALL ONION, SLICED THIN
8 MED. MUSHROOM, SLICED THIN
1/2 BELL PEPPER, SLICED THIN
1/2 C. PEPPER JACK CHEESE, GRATED

Spray skillet with Pam. Sprinkle breasts with seasoning.
Brown on med high heat, reduce heat, cover & cook 15 min. turning once.
Remove breasts from pan.
Spray pan with Pam again.
Add sliced veggies & saute till tender.
Place sauted veggies over each breast & sprinkle with cheese.
Great with a green salad & fresh fruit for dessert!

Boy, that sounds good! My hubby is not a chicken lover. But I am, I'll have just make it and he'll try it.
