Sunny & 60's!! It is sunny & nearing 85 here in Ok. Suppose to be low 90's by late afternoon. MUGGY! MUGGY! MUGGY!
DH fired up the smoker....again. Have a pork loin & some burgers & brats smoking as I type. Always throw enough meat on for more than 1 meal around here.
I made a light dessert to go with our dinner today. The taste test was a HUGE thumbs up from my son.

I call it Pineapple Whip.

PINEAPPLE WHIP

1 -15 oz. can crushed pineapple, drained
1 - 8 oz. cream cheese, softened
1 small Cool Whip (sugar free)
1/4 c. Splenda

Whip cream cheese & splenda.
Fold in pineapple, then Cool Whip.
Chill.
ENJOY!!

This would be good in a graham cracker crust too.

Oooooh Willow that sounds sooooooo good. I will have to make some up. Wonder if it would be good between two graham crackers like an ice cream sandwich? I think I need to type alll of your recipes onto recipe cards and fill my recipe box. That may be a summer project for me.

I love to grill so tonight I made chicken and smoked sausages. I like to make extras too. It never goes to waste here. Tonight I had a piece of chicken and sausage, some lowfat cottage cheese and some tomatoe wedges. Yumm! I really wanted all the picnic foods like macaroni salad, baked beans, hamburgers, etc. but this was just as good and better for me.
