Hello, Wendy and all,
I just decided to check in to see if anyone had posted lately.
We are slowing down again. I think part of it is the weather, we are getting nice weather and we are all busy outside!
I put a pork roast in the crockpot for dinner and add some carrots to it. Not sure what else I am having besides a salad. I made a refrigerator cheesecake--more for everyone else than me. But I still used Equal in it, fat free sour cream and cream cheese. And the low fat graham cracker crust. It is so easy and everyone loves it.

Refrigerator Cheese Cake

1 8 oz. sugar free cool whip
2 8 oz. cream cheese
1 cup sour cream
1/3 to 1/2 cup of sugar or substitute equal
1 to 2 tsp.vanilla
Cream well and spread into a graham cracker crust.

You can also make this into a bar like dessert and use a 9x13 inch pan and spread topping on it. Just make sure to keep it cold!!!

An elderly neighbor gave me this recipe. Her grandson expects it at every holiday! Even requests it instead of a birthday cake!!
Laurel

It may not be exactly diabetic friendly, but everything in moderation!!!!

Good Morning All! I was soooooo lazy over the weekend I didn't do much of anything. I did manage to mop the kitchen floor. No laundry or dusting or anything else. So guess what is on my agenda for today? Everything I didn't do over the weekend!! LOL!

Recipe sounds grest Laurel. I have saved it for later use......maybe tomorrow? hehehe

Most of the recipes I post are from family & friends & me. A very few I found on the net. All have been tweaked to make them more Diabetic friendly.

Ok....off to get started (after I finish my coffee).
