Subject: Crispy Roasted Cauliflower

Fixed this for dinner last night. DH & I ate the whole thing, along with a baked chicken breast with the skin removed. I didn't have fresh parsley so used the dried. YUMMY!!!!!

2 Tbsp butter
2 Tbsp olive oil
3/4 C fresh whole grain bread crumbs, divided
3 Tbsp minced fresh parsley
2 Tbsp freshly grated parmesan cheese (you can substitute pre grated, or shredded if you need too)
1 whole head cauliflower, washed, and trimmed into separate flowerettes.

Preheat oven to 350 degrees.
Steam cauliflower for 10 minutes, or until slightly tender. Drain well.

Melt butter and add olive oil. Combine and add 1/2 cup of the bread crumbs. Put cauliflower into well greased (Pam) casserole dish. Pour butter/oil/crumb mixture over, and stir well to get some of the crumbs on all of the cauliflower. Bake for 15 minutes and remove from oven and add the last 1/4 C of bread crumbs. Stir all gently to mix dry bread crumbs throughout the vegetables. Sprinkle with the parsley, and parmesan and return to oven for another 10-15 minutes, or until the breading is nicely browned and the crispy.

Wow, That sounds good. And I love cauliflower!
Just stopping in to say hello. I am heading outside to play. It is a sunny day today here and I have "cabin fever". I am going to run the sweeper in the car. And then play in the yard a bit. Not sure what I am going to do out there but I am not wasting a day I can be outside!I need the fresh air! I'll sew or do a craft this evening, but now I am going to get a little exercise!

This sounds wonderful we had plain old mashed sweet potatoes tonight but this would be a great change for later in the week. Thanks
