Subject: Need Help Making This Recipe WW-friendly

My niece, who dearly loves this recipe, has recently been trying to lose weight on WW. She's NOT coming to our family Thanksgiving because she doesn't want to have the temptation of eating too much of this. How could I make this WW-friendly? Would low-fat or FF Rice-A-Roni, FF chicken soup and low-fat Cheez Whiz work? Any ideas?
Thanks for your help!
Patty

RICE-A-RONI/BROCCOLI/CHEESE CASSEROLE

8 oz pkg Rice-A-Roni chicken flavor
1 pkg (10 oz) frozen chopped broccoli
1 can cream of chicken soup
1 jar (8oz) Cheese Whiz

Preheat oven to 350*. Cook Rice-A-Roni according to pkg directions. Cook broccoli according to pkg directions. Use very little salt. Place ingredients in casserole dish in this order: 1 layer Rice-A-Roni then, 1 layer of broccoli. Dilute soup with 1/2 soup can of water and pour over broccoli. Top with dollops of Cheese Whiz and bake.

Baking time: 30-40 min.
Pan size: 13”X9” casserole dish
Serves: 12-14

Okay could you use instant brown rice and use chicken bullion flavored water to "cook" it in to flavor it. Or use powdered chicken bullion. I would look for ff or light cream of chicken soup and instead of cheese whiz how about putting 2% milk fat sliced american cheese on top? well those are all of my ideas other than searching the WW recipe sites for something a little more WW friendly.

Thank you, Wendy, for your help! Sounds like it just might work!
I forgot to look yesterday while at the store for the lower fat Rice A Roni. I knew Campbell's made a FF cream of chicken soup and thought they had a FF or low fat Cheez Whiz, but my Wal-Mart didn't have the FF or low fat Cheez Whiz.
I thought since my niece wasn't coming this time that I'd have time to work on a different version for her by Christmas, but as of 8PM tonight, she and her sister had changed their minds and decided to come afterall. It's too late now as I've already made most of it the original way and will finish it tomorrow morning. Oh well, she'll just get to challenge her will power tomorrow.
Thanks again, Wendy!
Patty

You are welcome. Just remind her that she can have some just a smaller portion.

Hope you had a great Thanksgiving

Thank you, Wendy! We did have a good Thanksgiving! How was yours?

My niece did very well yesterday. She did have some, but just a small amount and brought a few things she knew she could have easily, which helped her a lot. We always make a big, kidding deal out of the broccoli casserole. I wasn't sure if she was even going to have any at all. I had warned my family beforehand NOT to make a big deal out of it this time since she was going to have to really watch what she ate and would be dealing with all the food. She did well, though! Hope she continues to do well on WW.

Patty
