They should store in the shell for quite some time, I'd think. Once cracked, you might want to use vacuum, or O2 absorbers.

Do you have a wood stove? The shells can be burned. I've heard that there are medicinal uses for the husks, and they used to be used for dye. They contain juglone, which is toxic to nightshades (tomatoes, potatoes, etc.), so I'd be wary of composting them. (Also avoid planting juglone-sensitive plants inside the tree's drip line.)

You might want to dig up any you buried, they're probably still good, and if nothing else, you could use them for squirrel bait (to keep them away from your garden).
