Your mention of All Saint's Day, brings to mind that the Church established Christmas to counteract the winter soltice, New Year's Day for those pagan observations, and Easter for the Spring Equinox. If the people were going to celebrate, the church wanted to make sure that they were observing Christian ideology. I am not sure it worked completely, given your posted observations about Hallow 'een.
