Nick,I had mine built by a local clubmaker two seasons ago with the Single Axis swing in mind. They are Toski Target irons. They are minimally offset and had Tackimac oversize grips. I've since gone to the Tackimac Equalizer grips and like them better. I didn't have them bent more upright but did have them checked a month later as suggested by the clubmaker. The 8 iron had to be bent but the others were fine as tested on the lie board. I didn't have them extended. I,too, went to a NG Demo and really liked the old cavity-backed irons but liked mine just as much. The Toski's cost me $425 and I've not regretted purchasing them.
You might bring along one of those tennis racket wraps to hit the clubmaker's demo irons with. That way you'd approximate the bigger grips. Hope that this helps.
