I don't think anyone can fit you over the phone or by e-mail. Many suppliers try because it means a quick sale.
Given the fact that most that are fitted need 2-4° upright you can add 1" in length and get close - but I'd suggest you place some masking tape on the sole of that demo and have the lie adjusted, if need be.

Getting all your physical specs does not tell me how you position the club at impact. Some reach, some stand more upright, some bend, some raise the hands high, some have hands low. We need a dynamic lie test to tell us how we are at impact. Then you can get clubs with a lie right for you. The other way is to take the clubs once you get them to a local clubmaker and have them adjusted. A small price to pay if have a well balanced set with a good head, shaft and your favorite SA grip. This is the way to get fitted by phone or e-mail, get your design close and allow a few bucks for the final adjustment. Only from a dynamic lie test do I know that a set built 4° upright will suit me....hope this helps you get a good set for a reasonable price :-) ....trencher

BTW the specs you give tell me your standard length due to long arms is -0.5". A club 1" longer than standard should play 3° upright for you. Does not tell me this suits your swing.
