I believe because if the defense could kick the ball out of bounds and force the offensive team to have to repeatedly inbound the ball, the game could get boring.

What we see today is largely inadvertent kicks by the defense. Because they know the offense will get a new shot clock with each kicked ball, the defenseive team is discouraged from constantly kicking the ball out of bounds.

Close your eyes and imagine a game played where the defense is essentially encouraged to kick the ball away because there is little/no consequence.
