Subject: TIRAMISU 我來了

材料:
芝士蛋漿:蛋白蛋黃各5個、糖30克(a)、糖50克(b)、鹽1克、云呢拿香油1克、馬斯卡普芝士(Mascarpone Cheese)500克、魚膠片3片
咖啡糖漿:蒸餾特濃咖啡200克、咖啡酒(Khalua)60克、咖啡香油10克、杏仁酒(Amaretto Liqueur)30克、手指餅、可可粉、糖霜各適量

做法:
1)分兩大碗,一碗加入糖(a)、鹽、云呢拿香油及蛋兼打至起泡。將芝士攪勻至滑身,加蛋漿打至忌廉狀。另一碗內,蛋白打至起泡,加入糖(b)打至忌廉狀,下熱魚膠溶液。分2至3次把蛋白加入芝士蛋漿內。
2)將手指餅鋪在盤中,掃上已混合的咖啡糖漿至完全吸收。
3)將芝士蛋漿鋪在手指餅上。重複這步驟2次至鋪滿,放進雪櫃冷藏4至5小時。最後餅面均勻撒上可可粉,餅面撒上糖霜。
