Well, it's not like I have *everything* figured out, but I'm pretty sure I know why the Others keep stealing kids. That seems to be who they really want: Claire's baby, the crazy French lady's baby, Walt and the two kids from the tail section. They only take adults in order to kill them, and then only if they interfere with their attempts to take children.
So. . .it would seem that either there's something about the island that renders people sterile *or* the Others are part of some weird religious cult in which all sexual intercourse is forbidden. So the only way for them to increase their numbers and pass on their culture is to kidnap children and indoctrinate them into their tribe.
BTW, where *is* the crazy French lady? Is she off romping through the jungle with the guy who escaped from the hatch? How big is that island, anyway?
