I don't watch any of these. I'm pretty sure detoured watches "Joan" and can fill you in on that. "Joan" is the highest-rated and acclaimed of these shows here in the United States.
A varsity game, or varsity team, is the highest sports team level for American high school students. In big high schools, they will have both a varsity and junior varsity team for most sports. The better of an athlete a kid is, the younger he will be moved up from the junior varsity (or j.v.) to the varsity.
