Subject: Mushroom question

Okay, I have read a few of the more lengthy posts on this subject and though I by far---no expert when it comes to fungus, I do have a quick question, seeing as you seem to know quite a bit on the whole muffin top realm.

I discovered a little mushrom at my meat store, oddly enough, called a "baby bella". Now, I know what a bella is, seen them plenty of times in larger forms, but never as small the button mushrooms. Maybe less than a quarter in size.

The question is, though these wonderful shrooms are delicious, the baby ones tend to be VERY salty. Is that common? I have never had a "salty" mushroom. Any thoughts???

What would even cause that? I know the gist of the science behind them and how they relate to soil absorption, but do you think these kind are salty because they are smaller, or is it more to do with their soil???

I know, wierd, right????

We3, Im no expert on mushrooms but I have studied them some and I do occasionally eat what I find. Baby Bellas are portabellas and if Im not mistaken so are button mushrooms. Google it....... wait for Stewarts answer Im sure he knows more about mushrooms than me. My favorite mushroom is the oyster, very good with beef roast or tips and gravy or sauteed in butter with a touch of worcestershire. :0) ANGIE
