In a U2 biography I read several years ago, a few reasons were floated. According to the book, the name was suggested by a friend of the band after Adam said he liked names like XTC .. kind of ambiguous.

U2 was suggested because it had a couple of connotations: the spy plane, "you too" and maybe even a battery of some kind that was sold in the UK at the time (but I'd have to double check on the battery part).

The spy plane reason is the one cited most often, I think because it's convenient. Much like everyone assumes REM stands for "rapid eye movement." But I've read interviews with the band in which they say the name was chosen specifically for that meaning. It was more of a random decision.
