This is a very good question. Banner grabbing is not allways the same. I have 2 examples, at http://www.gt-irl.com you telnet to port 80 and press enter twice and you get the OS type. Which is NT 4.0 but labled as IIS 4.0.
But at http://www.lotto.ie after you connect and press enter you just get a lot of firewall grabage. Altho if you connect to Port 80 the same port and type in "get 10/10" you get the OS type like the other one. Which is also NT 4.0 (IIS 4.0). Also win2000 is IIS 5.0.

this type of banner grabbing dont work on all computers only ones running web servers.

I think you sayed you pressed enter and you saw some html code, that is the banner.
