But at the same time, their reactions aren't exactly realistic. Gunn dealt with his issues concerning demons during the beginning of season three and for him to want to go out and kill demons "because they're all evil" takes away all the development he's made since then.

Plus, the guy's reacting to a woman flirting with him - it's been made clear that he wouldn't do anything to hurt Fred like that unless he was under the influence.

Of course, if it's just Gunn that's drugged rather than Fred... her reactions to what he's doing would be kinda realitic since she'd be confused as to what's happened to him so suddenly.
