Personally I've found my larger rabbits to have a more even temperament than my dwarves. That being said, you make your rabbit. If you're willing to respect their wishes and take time to get to know each other, any rabbit will become a loving and enjoyable companion.

As for handling.. this is an individual thing. Some buns like it and some will tolerate it, other won't. Out of all my buns, 3 will enjoy sitting on my lap, 6 will tolerate it and one struggles and fights. I try to respect their wishes and only hold them when needed (nail clips etc). I do try to get them all to the tolerate stage. This takes time as they need to learn to trust you and know that you aren't going to force them for long periods of time.

Litter training? Any and all rabbits can be litter trained. Breed makes no difference. In my experience, the only thing that does have an impact is getting them sterelised... it helps immensely!
