++Some bunnies dont like being picked up but you
can try sitting on the floor with her and getting her to
sit on your knee while you hold a treat for her to eat eg carrot or such

++Some rabbits do this. I believe its called tracking
and is more common in white albino rabbits but dont quote me on this. You could try www.rabbit.org to see if they
have some information on this condition.

++These aren't the ceacal chain like night time pellets rabbits
re-ingest that you're seeing? Does she do loose droppings
after eating hay? I have had rabbits that have been a
bit loose after certain types of food.

++I think it is excitement. Some bunnies do make strange
grunting type noises and I have a little male who does
this. If you have any doubts about her health though,
it is always better to consult a bunny vet.
