I must admit this concerns me a little as rabbits have very delicate digestive systems and any dietary changes need to be made gradually and slowly.

The bulk of a rabbits diet should consist of good quality oaten or meadow hay, followed by fresh vegetables, then fruits, then pellets.

Pellets are last because they are notoriously high in proteins and fats, which are not good for rabbits. To keep their digestive systems running smoothly they need high fibre which is the reason for the hay and vegetables. Diets that are high protein, fats and calcium can cause a number of health problems with the liver and bladder. Too little fibre can literally cause the digestive tract to stop working which leads to blockages as well as halting the production of cecal pellets, which are vital to a rabbits good health.

You haven't given a lot of information regarding the purpose of the science project or the expected outcomes, but I would be very hestitant about using the rabbits diet for this. The only way I could see this being used in a way that wouldn't be harmful to the rabbits would be to move one to a totally pellet free diet and keep one on a minimum amount of pellets.
