Well, taking a quick look it appears that the input video goes into the inverting input of one of the 810s and into the non-inverting input of the other 810. The disable feature is used to determine which opamp is active and therefore which signal is passed. The signal is being inverted about the INVLEV signal which is being fed from the MUX into the non-inverting input of the 810 which inverts the video. Well, did I pass? Ok for a software guy?

I pulled up a data sheet on the 810 from Analog Devices. HDTV capable, 100MHz bandwidth... AWESOME!

Your circuit is very slick, the multiplexer is a big improvement (in my humble opinion), not only being more linear than a 4066 but saving valuable pic ports as well.
