The Collins dictionary definition is this:

coward punch in British English
mainly Australian informal

noun
a sudden surprise punch

This is a laughable defense -- "clearly retaliating".

Regardless of what had occurred prior, Acres was running off.

Schultz hit him, while he was defenseless, in the back of the head.

And you're saying that's okay?

You do know that, regardless, there are rules against striking?

The range of defenses here are pretty funny, ranging from it's okay to hit somebody in retaliation, Acres deserved a clip, and it's only a coward's punch if you kill somebody.

Um, okay.
