This recipe is awesome, I've been making it for years and I always get asked for it. I always have some over ripe bananas in the freezer ready to make this. Just a note...this bread is better the next day....very moist and yummy!

Rose's Banana Bread

Amount Measure Ingredient -- Preparation Method

1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup margarine
2 1/2 whole bananas -- mashed
2 large eggs
1 teaspoon vanilla
1 cup flour
1 cup uncooked oatmeal
1 teaspoon baking soda
1 pinch salt
1 cup chopped walnuts,opitional
1/2 cup applesauce or any flavor yogurt

Cream sugar and margarine. Add bananas and applesauce or yogurt. Add eggs one at a time, mix well. Add nuts and vanilla. Sift flour, baking soda, and salt. Add to mixture along with the oatmeal. Bake@ 325* for 75 minutes. Check for doneness with knife. If necessary, bake another 15 minutes. Tent with foil if the top browns too fast.

To double this recipe, use 3 eggs and double all the rest of the ingredients. Pour batter in a bundt pan. Bake for 90 minutes @ 325*. Cover with foil the last 30 minutes.
