No-Bake Chocolate Cookies

2 cups sugar
1/2 cup milk
3 Tablespoons unsweetened cocoa powder
1/4 cup (1/2 stick) unsalted butter
3 cups rolled oats
1 cup flaked coconut
1 teaspoon vanilla extract
1 cup mini marshmallows

Line a cookie sheet with wax paper and set aside.

In a large, heavy bottomed saucepan, combine the sugar, milk, cocoa and butter and stir to combine. Cook over high heat and bring to a boil. Allow to boil for 1 1/2 minutes, remove from heat, then add the oats, coconut, vanilla and marshmallows and stir well to combine. Drop by tablespoons onto the prepared cookie sheet and chill.

Makes 4 to 5 dozen.

Chocolate Peanut-Butter No Bake Cookies

2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal
Waxed paper

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.
