Microwave Peanut Brittle

it is very good and simple to make:

1 cup granulated sugar
1/8 tsp. salt
1 cup raw peanuts
1/2 cup white corn syrup
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Mix sugar, salt and syrup and cook uncovered in microwave on high for 4
minutes. Stir and add peanuts; cook on high for 4 minutes. Add butter and
vanilla, stir into mixture. Cook 2 more minutes on high. Remove from microwave
and add the baking soda. Stir quickly until mixture turns a darker color. Pour
immediately onto a greased cookie sheet with sides. Let cool and harden, then
break apart into pieces. Make sure to get your microwave dish into hot soapy
water after you pour the brittle onto the pan, it hardens fast and is hard to
remove from the pan if left too long.
