First off, on the definition of 'equine' the rules refer to unicorns, pegasi, and unipegs; "Equines, that is, unicorns, unipegs, and pegasi, may not train to be warriors." The others you listed are not mentioned due to the extreme unliklihood that enough people would choose those characters that it would be worth the mention. So, I would say that, since the three above are the only ones mentioned, the other two would not fit under the label of 'equine' for these intents and purposes.

Now, the reasoning behind the exclusion of the aforementioned equines from warrior training stems both from the fact that the majority of unicorn legends I have studied and read refers to equines as peaceful creatures, and from the sheer annoyance of attempting to teach horses to fight. I have recieved comments from the former warrior instructor at Avalon on how difficult horses are to teach to fight that I decided it best that they be excluded for the sake of our poor overworked teacher. Most creatures people commonly play are some form of predator, carnivore, or humanoid--or partial humanoid--that the equines are the only notable would-be exception. Does this make sense?
