I don't think I can completely answer these questions, but I can add some data to the pot. I bought a 300MHz B&W G3 with 256MB, an ATI XClaim and Mac OS 9.2.2 two years ago. Soon after that, my PowerTower died and I moved the TwinTurbo 128 from it to the G3. Everything worked fine and I really got used to having two monitors. At one point, I found that the driver I was using was causing some problem (a crash, I think), so I upgraded to version 4.0. Now it works great, but I can't change the command key for zooming in.
Now I'm thinking about a new machine and I know it will be Mac OS X. I've set myself up with a drive partition to start getting used to OS X and to test compatibility. However, since I only have 256MB, I have not used it much. However, both monitors work fine, with no strange colors or odd resolutions. It does run rather slow because I have not gotten around to installing the drivers.
