Sweet Potato Casserole


3 cups cooked and mashed sweet potatoes
2/3 cup white sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1/2 cup milk
2 eggs, beaten
1 cup packed light brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour
1/3 cup butter, softened


Directions

1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2 In a large mixing bowl, combine sweet potatoes, white sugar, 1/4 cup margarine, vanilla, milk, and beaten eggs. Mix well. Pour mixture into prepared baking dish.
3 In a medium mixing bowl, combine brown sugar, chopped pecans, flour, and 1/4 cup margarine. Mix well. Sprinkle over sweet potato mixture.
4 Bake for 25 to 30 minutes.


An alternate to the pecan topping is a big bag of teeny marshmellows. This is not to be confused with a dessert. It is a vegetable dish. If it were a dessert, it would be served in a pie crust.

Yum...yum...now I will make this. I ain't that vegetarian.
