To begin with, maybe "job" isn't the right word to describe what a "class" is all about. Though it does have some career elements to it, I think there are better ways of looking at what a class is.

Class represents the tool-box that a character will bring with them to solve problems. In your two polar examples (paladin and theif [now rogue]), we see two very diffent approaches to life. A paladin is, arguably, the most limited in his approach to problems, while a rogue has many, many more options and it doesn't even have to be on the unlawful side of things even (say an honest locksmith, private investagatior or military scout).

In Faalor, I'm perfectly willing to let you come up with any sort if idea that seems reasonable for your character. With the ability to mix and match races, classes, skills and feats, no matter what class you pick, you should be able to come up with something very interesting. Say, you wanted to play a paladin that doesn't like close combat (off-the-wall, I know), you could choose to specialize in the short bow and take hide as your main skill. You want a wizard with a chip on his shoulder, pick the taunt skill and you can have your character talk trash at his enemies to get thier attention (causing them to attack the wizard). Or, what about a halfling barbarian?!? That in itself is a stretch. hehe It's all gonna be about creatively chooseing your skills and feats. It will be all about creating a believable character with real weaknesses, fears and quirks. You could take on the role a fighter as you described or make him something more developed. Fighters for example could be thugs, temple guards, soldiers, body guards, door men, assassins, knights, slave-traders, Illriggers, theives, dandies, bar-tenders, blacksmiths, bricklayers, you name, it a character with the fighter class could be.
