Good luck on the hub motors. I have not seen any such motors that are "ready for prime time." Best you're going to do there are the Crystalytes, and they top out at about 3kW each.

Cutting out two hub motors will not decrease drag. Each motor has a fixed amount of both mechanical and magnetic drag, and you'll "pay" that penalty whether they are powered or not.

If you are serious about a conversion, a far simpler route is to choose a car you like, take the engine out, get an adapter plate for the transmission, and mount a motor in its place. Such conversions have been done hundreds of times with good success.

Lead-acid batteries will get you a range of 40-50 miles at speeds of 55-60. You'll likely need to beef up the car's suspension to handle the weight of the batteries.
