I feel that the blood drinking was put in to make us notice the fact that he was drinking blood, drinking it more than we're used to seeing him drink.

Lilah already had a sample of Connors blood and made it clear to Sahjhan (Mr. Daylight Savings Guy)that their plan had started. I figure that they have spiked Angels blood with that of his son's making him not only crave human blood but crave more of the blood he is unkowingly sampling.
