I would like to share this great recipe for a roast cooked in the crock pot. It is adapted from a recipe I found on the internet. The original calls for stew meat but I decided to try it w/ a chuck roast and it has become a family favorite.

Beer Braised Crock Pot Roast

chuck roast, trimmed of extra fat
1 teaspoon salt
1/2 teaspoon pepper
2 medium onions thinly sliced
1 8 oz. can mushroom pieces undrained (optional)
1 12 oz. can beer (any kind dark or light)
1 tablespoon vinegar
1 can beef broth
2 teaspoons sugar
2 cloves garlic, minced
1 teaspoon thyme
2 bay leaves

Put the beef in the crock pot. Combine all other ingredients and pour over the roast. Cook on high for 6-8 hours. Can thicken the juices before serving if desired.I usually don't. You can also add potatoes and carrots if desired. Adds great flavor. It doesn't taste like beer. The beer tenderizes the meat and adds a great flavor. Sometimes I double the ingredients if we want a lot of "juice" for mashed potatoes.
