Subject: Chicken and Shrimp Creole

6 oz skinless, boneless chicken breast halves, cut into bite-size strips
1/2 cp chopped green sweet pepper
14 1/2 oz can diced tomatoe w/garlic & onion
15 1/4 oz can whole kernel corn (drained)
1 tsp cajun seasoning
8 oz cooked, peeled and deveined shrimp (whatever size you like)
Coat large skillet lightly with cooking spray. Cook and stir chicken and bell pepper over heat until chicken is no longer pink. Stir in undrained tomatoes, corn and cajun seasoning, Bring to a boil, reduce heat. Simmer covered for 2 mins.
Stir in shrimp; heat. Serve over rice
Serves 4
(Recipe can be doubled to make serving for more)
