1 large onion diced
1 tbsp minced garlic
2 lbs cooked and dranined hamburger
2 cans diced tomatoes
1 sm can corn
1 can kidney beans
1 can pinto beans
2 bell peppers (non-green) red, orange and yellow work best
2 tbsp corn meal/flour
1/4 c chili powder
1 tbsp cumin powder
olive oil and sesame oil
to taste: jalepinos, crushed red pepper, tabasco sauce, red pepper sauce

cook onions and garlic with about 3 tbsp olive oil and 1 tbsp sesame oil (for best flavor) until carmelized. Add about 2-3 cups water (depending on how juicy you'd like it). Add chili powder and cumin, stir. Add rest of ingredients. Simmer for 2 hours and add more spices until it seems the right spice temperature. Taste test again in another 2 hours. This chili requires about 6 hours of simmering before it tastes right.

PS: taking the juice from the chili, adding cornstarch for a thickener makes a great gravy for slowcooking roasts!
