Kathy, yes, I am very familiar with fried plantains. I am Cuban American and a Food Consultant for icuban.com I live in Miami, Florida.
Fried plantains are a staple of both Cuban and Puerto Rican cooking. I am not familiar with the "Monkey Pickles" recipe you mentioned. I looked through all my Puerto Rican cookbooks and checked the web. It might be something your friend created.
There are two ways to eat plantains and I don't know to which you are referring:
ripe plantains called platanos maduros and
green plantains called tostones
