1.5 cup All-Purpose Flour, sifted
1.5 tsp Baking Powder
0.25 cup Margarine or butter, softened
.75 cup Sugar
1 Whole Egg or Egg Substitute [1 Tbsp soy flour mixed with 1 Tbsp water]
~.25 cup Milk or water to soften
Mix these together gently so that a soft dough forms. Flatten into a greased bread pan. Pyrex is nice to use as you can see the contents cooking. On top of this, add a mixture of:
2 cups blueberries [wild if you can get them]
about 1/2 small can of sweetened condensed milk [perhaps 3 oz.]
Bake in a 350 degree oven for 45 minutes. It will need to cool down for 1/2 hour or so before you can eat it. It is very nice eaten warm with vanilla ice cream.
