Today's Recipe...

Cheddar Corn Pie

Metric Ingredient Imperial

5 ml baking powder 1 tsp
25 ml shortening 2 Tbsp
4 eggs 4
500 ml milk 2 cup
25 ml dry bread crumbs 2 Tbsp
6 slices bacon, cooked and crumbled 6
250 ml old cheddar cheese, shredded 1 cup
6 green onions, finely chopped 6
half sweet red pepper, diced half
250 ml corn kernels 1 cup
pinch salt pinch
1 ml pepper 1/4 tsp
pinch cayenne pepper pinch
125 ml all-purpose flour 1/2 cup

Directions
Grease 10 inch (25 cm) quiche pan or pie plate; sprinkle with bread crumbs. Combine bacon, cheddar cheese, onion, red pepper, corn, salt, pepper and cayenne; sprinkle over bread crumbs.
In bowl; stir together flour and baking powder; cut in shortening until in fine crumbs. Add eggs and milk; mix just until smooth. Pour over bacon mixture.

Bake at 350 F / 180 C oven for 45 to 50 minutes or until knife inserted near centre comes out clean. Let stand for 5 minutes. Makes 4 servings.
***Myself, I am going to try this with broccoli instead of the corn....
