I "think" the secret to the potato pancakes girls, is to get ALL of the water squeezed out of the potato after it has been grated.....
Also,do not let the grated potatoes stand too long as this will darken the potatoes....

To 2 c. of grated potato add
3 whole eggs
1 Tbsp. flour
1/2 tsp. salt

Have "fat"/oil hot and ready.
Drop by large spoonsful into hot oil.
Turn once when the underside comes slightly browned.
Serve immediately when finished....

This should work, or at least it has for me.
The same should apply for Salmon or crab cakes.....
To 1 large can of salmon, add the eggs, a bit of flour and seasonings that you would prefer with the fish.
Drop by large spoonsful into hot oil .....do not cook too long as this is what makes them hard thru and thru.
