There were not. So gentiles were created the same day Jews were, the sixth day. On that day Adam was created. Of course "adam" is Hebrew for human.

As to the rock question, I am unsure. How would you wish God to lift it? Because God is not in physical form, He would not be able to lift gravel (no hands). If you are asking if He could create anything that He does not have control over, the definite answer would be "no".

Of course my answer reflects my experiences in this universe. God is not bound by the same physics we are, so I could be wrong here, but I can't answer for things outside my experience.
