Subject: Kentucky Pound Cake.

Kentucky Butter Cake

3c unbleached flour
2c sugar
1t salt
1t baking powder
1/2t soda
1c buttermilk
1c margarine or butter, softened
1t vanilla or rum extract
4 eggs

Heat oven to 325-degrees. Generously grease (using 1 T solid shortening) and lightly flour 12-cup fluted tube pan or 10-inch tube pan. Lightly spoon flour into measuring cup, level off. In large bowl, blend all Cake ingredients at low speed until moistened. Beat 3 minutes at medium speed. Pur batter into prepared pan. Bake at 325-degrees for 55 to 70 minutes, or until toothpick inserted in center comes out clean.
