Subject: Stuffed Baked Onions

Stuffed Baked Onions

Ingredients:

4 large onions
5-oz. goat cheese, crumbled or cubed
2-oz. Fresh breadcrumbs
8 sun-dried tomatoes in olive oil, drained and chopped
1-2 Garlic cloves, finely chopped
1/2 Tsp Fresh thyme
2 Tbs fresh chopped parsley
1 small egg beaten
3 Tbs pine nuts toasted
2 Tbs olive oil, (Use the oil from the tomatoes)
Salt and ground pepper

Bring a large pan of lightly salted water to a boil. Add the whole onions in their skins and boil for 10 minutes. Use a Tsp to remove the center of each onion, leaving a thick shell.( I used a mellon baller and should have removed a few more layers)Reserve the flesh and place the shells in an oiled baking dish. ( I gently cut a small slice across the bottom to keep the onions standing upright) Preheat the oven to 375º.

Chop the reserved flesh up and add the goat cheese, breadcrumbs, tomatoes, garlic, thyme, parsley, and egg. Mix well then
season with salt, pepper, and pine nuts; divide the stuffing among the onions. Cover with foil and bake for about 25 minutes. Uncover and drizzle with the oil, and cook for another 30-40 minutes.Baste occasionally.
