Subject: BLACK WALNUT CAKE

BLACK WALNUT CAKE (Southern Living)

½ cup butter, softened
½ cup shortening
2 cups sugar
5 eggs, separated (room temperature)
1 cup buttermilk
1 tsp baking soda
2 cups flour
1 tsp vanilla
1 cup chopped black walnuts
1 (3-oz) can flaked coconut
½ tsp cream of tartar
Cream Cheese Frosting
Chopped black walnuts

Cream butter & shortening; gradually add sugar, beating well at medium speed. Add egg yolks, one at a time, beating well after each addition. Combine buttermilk & soda; stir until soda dissolved. Add flour to creamed mixture alternately with buttermilk mixture, beginning & ending with flour. Mix after each addition. Stir in vanilla. Add 1 cup walnuts & coconut, stirring well. Beat egg whites & cream of tartar until stiff peaks form; fold into batter. Pour batter into 3 greased & floured 9 round cakepans. Bake at 350 for 22-25 minutes or until springy to a light touch. Cool in pans 10 minutes before turning out to cool completely on wire racks. Spread Cream Cheese Frosting between layers & on top & sides of cake; press additional chopped walnuts onto sides of cake. Yields 1 3-layer cake.

Cream Cheese Frosting:
3/4 cup butter, softened
1 (8-oz) package cream cheese, softened
1 (3-oz) package cream cheese, softened
6-3/4 cups sifted powdered sugar
1-1/2 tsp vanilla

Cream butter & cream cheese; gradually add powdered sugar, beating until light & fluffy. Stir in vanilla. Yield: enough for one 3-layer cake.
