Subject: Creamy Garden Spaghetti

Creamy Garden Spaghetti


Ingredients:
1/2 pound of fresh Broccoli, broken into florets( I used a little more because it's good for you)
1-1/2 cups sliced Zucchini
1-1/2 cups sliced fresh mushrooms
1 large carrot, sliced( or 1/2 cup sweet red pepper, cut into 1" pieces)
1 Tbs olive oil or Vegt. oil
8 -oz. uncooked spaghetti( I used less and Angel Hair)
1/4 cup chopped onion(oops, sorry I used leeks)
3 cloves of garlic minced
2 Tbs butter
2 Tbs all-purpose flour
2 tsp. chicken bouillion granules( I used cubes and smashed them)
1 tsp dried thyme( The Star!)
2 cups milk
1/2 cup each, Swiss and mozzarella cheese, shredded

Saute' the broccoli, zucchini, mushrooms, and carrot or pepper in oil until crisp-tender.( Do not over cook. Mine were in and out of the pan in a flash)Remove from the heat and set aside.
Cook the pasta. Saute' the onion and garlic in the butter until tender. Stir in the flour, bouillion and thyme. Gradually add the milk, bring to a boil and cook and stir for 2 minutes or until thickened. Stir in the cheese until melted. Add the vegtables, heat through, drain the spaghetti and toss with the vegtable mixture.
