Subject: Wacky Cake (old school lunch room recipe)

Wacky Cake

3 cups flour
2 cups sugar
6 Tablespoons baking cocoa
1 teaspoon salt
2 teaspoons baking soda
3/4 cup vegetable oil
2 Tablespoons cider vinegar
1 Tablespoon vanilla
2 cups cold coffee (or water)

Preheat oven to 350 degrees.
Grease and flour 9x13 or 2-9" round pans. If you plan on turning cakes out of pans its best to line them with waxed or parchment paper.
Combine all dry ingredients in large mixing bowl. Add liquid ingredients and mix with whisk until combines. Pour into pans. Tap on counter to release air bubbles. Bake 30-35 minutes or until tests done. Let stand 10-15 minutes before removing from pans. Cool completely.

This makes a very moist delicious chocolate cake without eggs or milk!

Thank you! I have been trying to find someone with this recipe for about 5 year. I didn't know the name of it. My Mother in Law used to make it. It is VERY good. and easy.
