Pie Crust Extraordinary
(makes enough pastry dough for 4 single crust pies
or 2 double crust pies)

4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cups vegetable shortening (Crisco)
1 large egg
1 Tablespoon vinegar
1/2 cup water

Spoon flour lightly into cup when measuring. Combine flour, sugar and salt in large bowl; blend well. Add shortening; blend with pastry blender until mixture resembles coarse meal. (Can use food processor if you prefer). Place egg in measuring cup; add vinegar, stirring lightly to blend. Add 1/2 cup water to egg mixture, blending well. Add to dry ingredients; blend well to form dough. Divide dough into 4 balls and wrap individually in plastic wrap; chill for at least 1/2 hour or until needed. The dough balls can also be frozen by placing the wrapped dough balls in a freezer zip lock bag.
