Subject: Tomato Bacon Jam

Ingredients:
1/2 lb bacon
2 lbs very ripe tomatoes, cored and chopped
1 medium onion, diced (we used yellow onion)
1 cup sugar
2 1/2 tablespoons cider vinegar
1 1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Cook bacon until crispy.
Combine tomatoes, onion, sugar, vinegar, salt and pepper in large saucepan.
Bring to boil stirring often.
Reduce heat to medium.
Crumble bacon into mixture.
Simmer until thick about 1 hour.
Check for seasoning (you may need to add salt and pepper)
Cool completly and ladle in to jars.
Refrigerate up to 4 days or freeze up to 2 months.
