Subject: Delicious Squash Casserole

Squash Casserole

1 lb pork sausage
2 cups shredded sharp cheddar
1 cup sour cream
1 tsp. pepper
1 tsp. onion or garlic juice
4 med. Yellow summer squash, sliced thick
3 tablespoon butter
4 egg yolks
Fine dry bread crumbs
1 tsp. paprika
1 tsp salt

Cook scrambled sausage until done, remove and drain. In saucepan cook squash in a small amount of salted boiling water. Cover and cook about 3 min or until tender.
Drain and set aside. Preheat oven to 350º. Combine cheese, sour cream, butter, salt, paprika an pepper in saucepan over low heat until cheese melts. In a separate bowl beat egg yolks, adding onion or garlic juice. Stir into cheese mixture and then add cheese mixture to squash and sausage in a casserole dish or big cast iron skillet. Sprinkle thin layer of bread crumbs over top and bake uncovered about 30 min. or until bubbly. Even though this is a casserole it makes a great appetizer served with toast, chips or crackers.
