Subject: Easy Mild Mexican Dip/Filling

MEXICAN DIP/FILLING

1 teaspoon vegetable oil
1 large onion (for 1 cup chopped)
1 pound lean ground beef (93 percent lean)
1/2 package (2 tablespoons) taco seasoning
1 can (103/4 ounces) tomato soup
2 cups shredded cheddar cheese
1 carton (8 ounces) reduced-fat sour cream
Heat the oil on medium-high in an extra-deep, 12-inch non-stick skillet that has a lid. Peel and coarsely chop the onion, adding it to the skillet as you chop. Add the beef, and raise the heat to high. Cook, stirring frequently, until it is browned, about 4 minutes. While the beef cooks, stir in the taco seasoning.

Reduce the heat to medium-low. Stir in the tomato soup until well-blended. Stir in the cheese until it melts, about 30 seconds. Remove the skillet from the heat, and stir in the sour cream until well-combined. Use as a filling for Mexican entrees or as a dip. Makes 5 cups.

Start to finish: 10 minutes.
